200 grams bittersweet chocolate
56 grams butter
6 grams vanilla
3 egg yolks
45 grams warm water
24 grams sugar
8 egg whites
3 grams lemon juice
100 grams sugar
Ahead of time, cover ramekins with butter and sugar, then freeze them.
Preheat oven to 400 F.
Melt chocolate and butter.
Remove from heat and add vanilla.
In stand mixer, whip egg yolks in water until light and fluffy.
Gradually add the smaller amount of sugar and beat until ribbons form.
Carefully fold in chocolate mixture.
Beat egg whites and lemon juice until frothy.
Gradually add remaining sugar, beating until stiff peaks form.
Temper into chocolate mixture.
Fill ramekins and bake for 20 minutes.
