Port Wine Pears

Ingredients

4 pears

1 bottle of ruby port

50 grams sugar

55 grams brown sugar

2 cinnamon sticks

1 star anise

4 whole cloves

2 grams nutmeg

4 grams vanilla

1 lemon zest

1 orange zest

3 grams salt and pepper

Instructions

Combine all ingredients except pears in a saucepan.

Simmer gently for 7 minutes.

Peel and core pears.

Drop pears into liquid and simmer for at least 45 minutes, turning every so often, until they are very soft.
