Frittata

Ingredients

enough olive oil

enough salt

1 sliced shiitake mushrooms

100 grams onion

0.25 kale

75 grams halved grape tomatoes

6 egg

enough salt and pepper

enough mozzarella

enough Parmesan

Instructions

Preheat oven to 400 F.

Spread mushrooms over a pan with some oil and salt.

Roast for 15 minutes.

Heat some more oil in a skillet over medium heat.

Saute onion.

Add kale, season with a bit of salt, and cook until wilted.

Add tomatoes and cook until soft.

Add in mushrooms.

Preheat boiler.

Crack and whisk eggs, season with a bit of salt and pepper.

Add to skillet and gently incorporate.

Cook until broiler for about 3 minutes.

Sprinkle top with cheese and broil another 3 minutes.
