2 egg yolks
3 grams salt
397 grams condensed milk
340 grams evaporated milk
13 grams vanilla
200 grams sugar
60 grams water
1 grams salt
Preheat oven to 350 F.
Prepare a water bath around the ramekins.
Blend eggs, milks, salt, and vanilla.
Blend until very smooth, ~30 seconds; avoid frothing.
In a medium saucepan, combine sugar, water, and salt.
Cook over medium-low heat until sugar is dissolved.
Increase heat to high and cook until sugar is lightly colored, ~5 minutes.
Immediately lower heat and continue cooking to golden.
Immediately pour caramel into ramekins.
Allow caramel to set for 5 minutes.
Bake for 40 minutes, until slightly jiggly but firm.
Cool for 30 minutes then chill for at least 4 hours.
