Eggplant Parmesan

Ingredients

3 eggplant

1 egg

300 grams bread crumbs

enough marinara sauce

453 grams mozzarella

25 grams Parmesan

300 grams bread crumbs

0.5 grams basil

Instructions

Preheat oven to 350 degrees F.

Slice eggplant into 1/2 inch rounds.

Beat egg in a bowl.

Dip eggplant slices in egg, then coat in bread crumbs.

Place on a baking sheet and bake for 5 minutes.

Flip eggplant slices and bake for another 5 minutes.

Spread marinara sauce on the bottom of a baking dish.

Layer eggplant slices and top with cheese.

Bake ~25 minutes, until cheese is melted.
