Chocolate Chip Cookies

Ingredients

226 grams butter

200 grams sugar

218 grams brown sugar

2 egg

8 grams vanilla

5.5 grams baking soda

10 grams hot water

400 grams flour

3 grams salt

340 grams semi-sweet chocolate chips


Notes

Be sure to leave out butter to reach room temperature before starting.

It is possible to substitute 50% of the flour for oats; pulse the oats in a food processor first.

Instructions

Oven temperature is 360 F for caramelization stage.

Cream together butter and sugars.

Mix in one egg at a time.

Add vanilla at the end.

Dissolve baking soda in water and add to mixture.

Mix together flour and salt separately, then add to wet mixture.

Do not overwork.

Dough should be light and fluffy but not sticky.

Baking time can vary around ~12 minutes; watch your first batch carefully and adjust as needed.
