120 grams flour
200 grams sugar
31 grams Dutch cocoa powder
5 grams baking powder
4 grams baking soda
3 grams salt
1 grams espresso powder
125 grams milk
55 grams vegetable oil
1 egg
4 grams vanilla
120 grams boiling water
Preheat to 350 F. Spray pan.
Add all dry ingredients and mix.
Boil water.
Add non-water wet ingredients and mix until well combined.
Reduce speed and carefully add boiling water and mix well.
Immediately transfer mixture to pan and bake for 30-35 minutes.
For cupcakes, only fill to a little over the halfway point to avoid spillage.
