240 grams warm water
9 grams yeast
12 grams sugar
283 grams bread flour
6 grams salt
Activate yeast in water and sugar for about 10 minutes.
Whisk flour and salt in separate bowl.
Gently mix together.
Stretch gently with wet hands every 10-15 minutes for 1 hour, trying to preserve all air bubbles.
Preheat oven to 500 F.
Form into shape on parchment paper.
Slash deeply.
Bake in dutch oven on bottom rack for 12 minutes with lid on.
Take lid off and bake another 12 minutes on the top rack.
