1 pie crust
5 Granny Smith apple
28 grams butter
50 grams sugar
54 grams brown sugar
15 grams lemon juice
5 grams cinnamon
3 grams salt
0.5 grams nutmeg
16 grams flour
25 grams raw sugar
Peel and core apples; slice thinly.
Toss apples with all dry ingredients except raw sugar.
Cover and refrigerate for at least 4 hours.
Drain and reserve liquid in a small saucepan; bring liquid to simmer and reduce by half (stir constantly).
Pour over apples and toss to combine.
Pour into pie crust and seal.
Sprinkle with raw sugar.
